In Toulon, Santa Rosalia explores the one-of-a-kind Mexican street food with organic and local products, served in a vintage urban saloon.

Seating at long clear wooden table under a Frida Kahlo painting, lovers of Mexican food could feel just like being in a real taqueria, those taco-specialised establishments that also serve a few other Mexican dishes. And yet, on the terrace filled with coloured-legged chairs, it is the unmistakable Mediterranean sun that shines. Santa Rosalia has imported the taqueria concept onto the streets of Toulon, giving it a twist by using organic and local products.

Inside, the vintage decoration mixes with retro furniture and walls expose old stones and concrete in a lovely mix of ancient and modern tones. Behind the counter, the duo of Emmanuel and Henri means business in the kitchen. They cook tacos by the minute, following seasonal recipes. On the tight menu, which changes on a daily basis, you will find various taco offerings – including a rice-based one in lieu of the taco shell for those who like to eat with a fork – as well as tostadas and more classic fare, but always according to the principle of sourcing the best products. Flour from Bras, Correns wine, veal from the Alps, regional vegetables, locally brewed beer… even the crockery is made in France!

À l'intérieur, la décoration sent bon le vintage, les meubles dévoilent un style rétro et les murs mêlent vieilles pierres et béton, doux mélange d'ancien et moderne. Derrière le comptoir, le duo formé par Emmanuel et Henri s'affaire pour cuisiner les tacos minute, suivant les recettes du moment. Sur l'ardoise resserrée, qui change tous les jours, faites votre choix parmi les quelques propositions de tacos – dont la recette peut être déposée sur du riz plutôt que dans une galette pour les moins adeptes de la finger food –, tostadas et même des plats plus classiques, aux ingrédients toujours « sourcés ». Farine de Bras, vin de Correns, veau des Alpes, légumes de la région, bière toulonnaise… même la vaisselle est fabriquée en France !
